Referred to in the Old Testament, olive trees were massively introduced by the Greeks in the wake of their paths of influence throughout the Mediterranean Basin. They quickly became part of the renowned Mediterranean triptych : wheat - wine - olive. Those who swear rather spirited oils will choose our 'Fruity' oil for its intense taste packed with flavour. Those who favour a subtle, discreet blend of softness and aroma will prefer our 'soft' oil.
Culinary advice :
Olive oil has become an institution; it sets the tone for all the typical dishes in the Mediterranean region. Very fruity, exhibiting a lovely colour that ranges from gold yellow to green depending on the variety and the soil it grew in, olive oil will also season all of your salads and will provide your dishes with character. it can be used in light, one-time cooking.
Recipe ideas : ratatouille, vegetable stir-fry, tapeandes, cod brandade, vegetable or fish marinade etc.
Nutritional benefits :
Thanks to its sedative and laxative properties, oilve oil stimulates the digestive process. It has rich oleic acid content (over 70% of all fatty acids). This monounsaturated fatty acid purportedly lowers cholesterol and prevents arteriosclerosis, while increasing HDL (good cholesterol) levels in the blood to the detriment of LDL (bad cholesterol).
When consumed regurlarly, it avoids the accumulation of fat in the body and prevents the hardening of arteries. Olive oil is especially recommanded in the case of liver or kidney complaints as well as digestive problems.
In order to enjoy a balanced intake of fatty acids, we suggest you combine or consume uncooked olive oil, alternating with other virgin oils with a higher polyunsaturated acid content (sunflower, safflower, soya, sesame) and alpha-linolenic content (walnut, rapeseed, soya).
