This kind of lecithin is a phospholipid extract with particularly high phosphatidylcholine content; it is obtained from organic soya oil using a fully-mechanical process combining the rehydration and centrifugation of the gums contained in the oil.

Organic soya lecithin comes as a paste; it is packaged into 5 Kg plastic buckets.

Lecithin belonging to the phospholipid group is a natural emulsifier that promotes the proper digesting of lipids, the metabolism of cholesterol and the regulation of lipid content in the serum. It is also an antioxidant thanks to its tocopherol content.
